From kindergarten, Carol's insatiable curiosity and passion for food was unmistakable.
The nano second her classmates opened their lunchboxes, the enticing aromas irresistibly drew her in. "Like kryptonite," she recalls. So much so, without any hesitation and full of excitement, she would eagerly request a taste.
Her curiosity had no shame.
None.
But her infectious charm always ensured she got a bite.
"She's always laughing and smiling," remarked her teacher.
Carol's spirit for exploration and ever-present smile set the stage for her culinary journey in the years ahead.
In the beginning, a French mariner named Nicot stumbled upon an eye-catching notice while at the marinas mens washroom.
"Canadian looking to Sail anywhere," with Carol's smiling face staring straight at him.
He chuckled at her unique advertising tactics. Then called her.
Their journey began with a challenging sail from Gibraltar to Lanzarote. Navigating through some of the roughest waters Carol had ever faced. She was determined to brave the 2.5-meter swells occurring every 5 seconds, all while taking care of a seasick crew member for five days.
Captain Nicot recognized a true sailor and partner in Carol. They continued their adventures sailing through the French West Indies as a yacht team. Where they spent an additional few years working with a couple of small charter companies.
In this journey, Carol's passion for sailing, food, and creating memorable experiences blended perfectly. The rest, as they say, is history. Sort of.

Hailing from Vancouver, BC, Canada, where a rich tapestry of Asian culture thrives alongside her Colombian father and El Salvadoran mother, Carol's culinary journey began. She draws inspiration from these diverse traditions, customs, and techniques.
Before and after earning degrees in Intercultural Communication & Studies, Business, and Art & Design. Carol continued embarking on global adventures, living and travelling through numerous countries, including Spain, Thailand, South Africa, France, Italy, Turkey, Greece and more. Her culinary skills were honed through a combination of formal training and self-learning, as the traditional culinary school didn't align with her nomadic spirit.
During her travels, Carol sought out opportunities to learn from chefs worldwide, gaining an eye for strategic problem-solving and adaptability. She's known for her honesty, reliability, hard work, and loyalty.
This humbleness, integrity and dedication secured her two job offers at Michelin Star & recommended restaurants. All from a letter she wrote emphasizing her relentless work ethic, professionalism, and kitchen cleanliness.
Carol eventually returned to Europe for the inspiration she craved and completed stages at restaurants, culminating in her first Executive Chef role. Alongside managing yachts as a "Yacht Couple" (Captain and Chef Chief Stew), she also has experience in managing 5-star Luxury Chalets in Whistler, BC, and villas.
